EASY AND QUICK POTATO MASALA for poori/chapathi


Potato masala is the easy and quick side dish for chapathi, poori. Poori masala is the most popular breakfast in hotels. This is the simpler version. Very easy to make in mornings. I hope you will try it!!

Preparation time: 15minutes 
Cooking time: 10minutes
Serves: 3 

WHAT WE NEED: 
Potato-2 
Onion- 1 
Green chilli- 1 or 2
Curry leaves- 1 spring 
Turmeric powder - 1tsp 
Salt as needed 
Water- 1/4cup 

For tempering: 
Oil- 1tbsp 
Mustard seeds- 1tsp 
Bengal gram- 1tbsp

METHOD: 

Boil the potatoes. Cool down and peel off the skin. 

Mash the potatoes well. Chop the onion and green chillies finely. 

Heat a oil in a pan. Add ingredients given under tempering. Let it sizzle. 

Now add in finely chopped onion and green chillies. Saute.

Add in turmeric powder and salt to it. 

Now add the mashed potatoes and water. Saute it in low flame for few minutes. 

Switch off the flame and garnish with curry leaves.

SERVE with your favourite chapathi/poori..!!

SOFT POORI


Poori is a most popular breakfast dish in south India. Kids and adults favourite one. Easy to make it. It's a simplest breakfast. Here you can learn how to make soft and fluffy poori. Hope you will try it at home!!

Preparation time : 5minutes 
Cooking time: 10minutes
Serves: 4 

WHAT WE NEED: 

Wheat flour- 1 1/2 cup
Salt-1tsp 
Sugar- 1/2tsp 
Oil/ghee- 1tbsp 
Warm water/milk- 1/2cup 
Oil for frying

METHOD: 

Take the wheat flour in a wide bowl. Add salt and sugar. I added ghee to it. It gives nice flavour. You can add oil also.

Mix it well. And add water lil by lil and start to knead. 

Knead it to hard dough. Now divide the dough into equal balls. 

Heat oil in a kadai. 

Take a ball. Roll it till thin. When oil heated drop the poori into oil. 

Press on the top of the poori with using a paddle. It will puff up. Now gently flip the poori. 

Once it is cooked, take it out. Drop the another one and follow the same steps.

Fluffy poori is READY!!

SERVE HOT with masala!!

KEERAI PORIYAL


KEERAI poriyal / spinach poriyal is very simple one. It is a quick and healthy sidedish. There are variety of keerai available in market. Here I used arai keerai for poriyal. You can use any other keerai also. 

Preparation time: 10minutes 
Cooking time: 10minutes 
Serves: 4 

WHAT WE NEED:
Keerai- 1 bunch
Onion- 1 
Garlic- 5 pods
Coconut- 1 piece
Salt as needed 

For tempering:
Oil- 1tsp 
Mustard seeds- 1tsp 
Cumin- 1tsp 
Dry red chilli- 2 
Bengal gram- 2tsp 

METHOD: 

Clean the greens and cut out the root part of it. Wash them thoroughly. 

Chop it finely. Chop the onion. Crush the garlics. Grate the coconut. 

Heat a pan, add oil, mustardseeds, cumin, red chilli, Bengal gram. Let it sizzle.

Add onion, crushed garlic, salt. Saute well.

Now add the cleaned keerai. Saute and keep the flame to medium. 

Do not close with lid. Do not add water to it. Naturally, it will leave water. So it doesn't need extra  water for it.

After 5 minutes, when the water dries completely add in grated coconut and switch off the flame..

SERVE HOT..!!

SIMPLE MUTTON BIRIYANI in pressure cooker



Mutton biriyani... weekend special samayal... different taste... 
I made this mutton biriyani in pressure cooker.. It tasted delicious and different.. Here I skipped red chilli powder to the biriyani and added green chillies and garam masala... stay here and learn how to make this mutton biriyani...

Preparation time: 15minutes 
Cooking time: 20minutes 
Serves: 4 

WHAT WE NEED: 
Mutton- 1/2 kg 
Basmati rice- 1 1/2cups 
Onions- 2 big sized
Tomato- 2 medium sized 
Green chillies- 4 or 5 
Mint leaves- 1cup 
Ginger garlic paste- 1tbsp 
Whole garam masala spices 
Garam masala- 1tbsp 
Ghee and oil- 2tbsp 
Salt as needed 
Water- 3cups 

Marination of mutton needs: 
Curd- 1/2 cup 
Salt- 1tsp 
Turmeric powder- 1tsp 
Ginger garlic paste- 2tsp 

METHOD: 

Clean and wash the mutton. Marinate it with the given ingredients for 1 hour.

Soak the rice. Slice the onions, tomatoes and green chillies. 

Heat the pressure cooker and add ghee, oil. Add in the whole garam masala spices. Once it has got heated, add in the sliced onions and green chillies. Add lil amount of salt to onions get brown fast.

When the onions browned, add in ginger garlic paste and tomatoes. Saute it.

Then add in mint leaves and saute it well. Next now add in the garam masala powder. 

Time to add marinated mutton to it. Mix well and add required salt, saute well. 

Now add in water. Let it to boil. Wash the soaked rice and add it to it.

Close the lid and switch off the flame after 1 whistle. 

Open after the pressure releases by itself. Garnish it with mint and coriander leaves. 

SERVE HOT with Raita..!!

CHICKEN FRIED RICE

Chicken fried rice is an easy and delicious dish of cooked basmati rice with ingredients such as vegetables, eggs, chicken. Ever popular and all time favourite dish. There are many variations. Here is how you can make it  very easily at home. 

Preparation time: 15minutes 
Cooking time: 20minutes 
Serves: 5-6 

What we need: 

Basmati rice- 1kg 
Chicken- 1/2kg
Eggs- 2 
Onion- 2 
Green chillies- 4 or 5 
(adjust according to UR taste)
Veggies- 1cup 
Garlic- 15 pods
Ginger- 1 or 2 inch sized
Pepper powder- 1tbsp 
Coriander leaves- handful 
Oil- 3tbsp 
Salt as needed

METHOD: 

Slice the onions, chop the onions, veggies, garlic, ginger and green chillies very finely. Take the chicken and cut into small pieces without bone.

Heat a non stick pan add oil. Scramble the eggs. In the same pan add chicken and saute for few minutes. Close with a lid to get boil. 

Take another pan. Heat oil in a pan, add finely chopped ginger, garlic and green chillies. Saute for a minute and then add the sliced onions, chopped veggies.

Meanwhile boil the rice.

Saute it in high flame for few minutes. Then now add scrambled eggs and chicken. Mix well and add salt.

Now add in the boiled rice and pepper powder to it. Mix well.

Switch off the flame and garnish with coriander leaves...

Yummy....!! SERVE HOT!!
